The company carefully selects quality grapes, usually Lambrusco and Trebbiano varieties from Modena and Reggio Emilia in Italy, for their delicate concentration of sugars and acidity. The grapes are then pressed, and the juice is boiled into a thick, sweet syrup that then ages in a wooden cask with the "Mother" vinegar.

The heart of Giusti's production is a collection of 600 casks dating back to the 1600s, from where the purest extractions that create the unmistakable aroma of their balsamics are collected. Casks provide an intensity of wood essences and aromas, and the older the cask, the more complex the vinegar.

Giusti's balsamic vinegars are IGP certified and come in various flavour profiles, such as wood, cherry, and vanilla; sweet yellow fruit; plum jam, honey, and vanilla; plum, cherries, and sweet spices; and spicy and woody. They are recommended for use in pasta, cheese, meats, salads, marinades, vegetables, fish, fruit, desserts, and aged cheese.
